Oatmeal Pancakes | An Abrams Dinner Party Recipe

Ingredients

Units
  • 2 1/4 cups rolled oats
  • 2 tsp baking powder
  • 1/2 tsp plus a pinch of salt
  • 1 tsp cinnamon (or tsp plus a pinch of gingerbread seasoning)
  • 4 eggs, separated
  • 3/4 cup plus 1 tbs milk
  • butter for cooking

Instructions

  1. First grind the rolled oats in food processor until it becomes a fine flour.
  2. Add the baking powder, 1/2 teaspoon of salt, and cinnamon and combine by pulsing the food processor a few times.
  3. In a mixing bowl, whisk the egg yolks together with the milk and add the dry ingredients, stirring to combine.
  4. In another bowl, whisk the egg whites and the pinch of salt until there are stiff peaks. Fold into the batter.
  5. Heat a skillet with butter, add batter and cook until golden brown.
  6. Serve with fruit, syrup, or compote of your choice!

I am excited to let you guys in on a project I will be working on from now until the Spring with Abrams Books. I was thrilled to get an invite to join the Abrams Dinner Party, giving me access to their pre-release fall and spring cookbooks. Cookbooks are my thing. To me they give you an intimate look into the chef’s secrets, creating this connection between you, the cook and the food you are creating. Sorry, that’s a little geeky, but sharing recipes is so special to me. At our house, it’s what inspires us to try new things.

I will be sharing quite a few recipes in the coming months, so I thought we would start this series off with breakfast. I found these oatmeal pancakes from Yvette Van Boven’s Home Made Christmas and was excited when I saw how easy they were to make. After Eva joined the family, cooking has been a bit more difficult. Finding the time to cook from scratch (especially on the weekdays) is hard, but a recipe like this reminds me that it is possible to something tasty in a short amount of time.

The ingredient list caught my eye when I stopped at this recipe during a flip through of the book. There are only 6 ingredients and you most likely already have them in your pantry. The mess is also minimal (yaaaassss). Those two features are something I look for in all of my weekday recipes, because you should see what it’s like at our house when everyone gets home from work/school.

After making these and having the whole family try them, I decided they should be dubbed the adult version of a kid friendly meal. The oatmeal flour gives them texture and more of a of sophisticate feel. They also aren’t as sweet as your regular pancake recipe. With Christmas coming up, I thought I would share with you the slight change I made to the recipe. I actually didn’t have cinnamon in the cupboard, but I did have pre-made gingerbread seasoning mixed up. I incorporated the these seasonings in (plus a dash more of what was called for in the original recipe) and you have yourself a holiday inspired recipe. There was just enough gingerbread taste for it to be satisfying.
